There was a combination of artistic and forward thinking technique with traditional and unique ingredients. The highlight for me was the dry ice "pistachio". Although the "cauliflower" with caviar was definitely in that conversation. The way that they created the flavors and textures of such simple ingredients with a totally unique experience of those flavors was amazing. Service was the name of the game, the lead Ann made the whole dining experience seamless, a story, gave us insight into the chefs intention for us with each bite. Sommolier Aaron was the tone setter for each bite with the perfect pairing. I would advocate for doing the wine pairing. We did one with and one without and as the without, I ordered à la carte glasses which were fabulous- but the pairings were perfectly matched to draw more out from each dish and flavor. Other service staff like Julia and Pavel took care to keep us on our valencian Journey, and the view into the kitchen from every table was a pleasant touch. Although we made reservations at El Taller del Xiquet, not realizing it is different from Xiquet by Danny Lledo, we came on a quiet night and asked if we could switch to the 10-course tasting menu only available at the latter. Fortunately, the chef could accommodate us and have no regrets about doing so. The courses are superb beyond imagination in both taste and presentation. We particularly enjoyed the razor clams in beet tartlet and the dry-aged squab. The serving staff were attentive and provided explanations about every course as it was brought to our table although the level of detail appeared to vary depending on the server.
