Perfect music, real candles and a beautifully minimalist atmosphere put the focus where it should be; on the food. Each course was incredible - ingredient quality, technique and plating - it was true culinary artistry. Watching Chef and sous chef cook and plate was so fun and made my mouth water anticipating the flavors. Fantastic service with a friendly and attentive staff. Food portions were spot on! - LLucky1 review5.0Dined 4 days agoLa Mer was not simply dinner. It was gastronomy, hospitality, and atmosphere orchestrated into an experience I will remember for a lifetime. I chose the vegetarian tasting menu, and the opening beet course immediately dismantled my expectations. I have never loved beets, yet paired with basil oil, beet purée, and an ethereally crisp tapioca, it completely transcended my palate. The Five-Way Carrot Expression followed, with remarkably fresh carrots presented in contrasting textures alongside a carrot, passion fruit, and ginger sorbet. Sweetness, acidity, and ginger danced together beautifully, making it perhaps the most refreshing course of the evening. Another highlight was the zucchini, delicately sliced, rolled concentrically, and paired with basil and zucchini purée. Its brilliance was restraint. Neither basil nor zucchini overpowered the other. They existed in perfect equilibrium. I also asked the mixologist to surprise me with a nonalcoholic pairing. What appeared to be a simple watermelon drink was anything but. Aromatic, complex, and almost contemplative, it awakened the senses rather than merely accompanying the food. Dessert left me nearly speechless. Silky custard, brittle pecan and toffee textures, shortcake, grapes, and herbs somehow made every bite a different composition. Rich, delicate, fresh, yet never excessively sweet. Beyond the cuisine, Waikiki and Diamond Head stretched before me as live music drifted from below. When daylight disappeared, the view did not. It simply transformed. I spent over five hours here celebrating my birthday and was the last guest to leave. Not once was I rushed. As I departed, members of the staff shook my hand and wished me happy birthday again. Even the manager personally came to speak with me. Exceptional cuisine makes a restaurant memorable. Exceptional hospitality makes it immortal.
