Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

The name Zacatlán surged from the origins of our chef, Eduardo Rodriguez. He was born in Zacatecas, Mexico (north-central Mexico), which is defined as "the habitants of the land where grass grows". Zacatlán is the nahuatl translation for "land with an abundance of grass", and that is where our idea of Zacatlán Restaurant began. Zacatlán Restaurant desires to continue to preserve the traditions for our upcoming generations, while bringing forth new flavors. These new flavors incorporate Southwestern and Mexican influences.     We have been dining at La Boca since they first opened in 2006. The food is wonderful. Each visit is a taste sensation. The Bruschetta is a must every time and the Gambas Fritas were cooked to perfection. Always a fun meal. We are already looking forward to our next visit.

    Excellent food- Varied selection of sushi, sashimi and lively shareable cooked dishes. Nice wine, sake, beer and cocktail selection. Only downside is that both times we have been, it took far too long to get the cocktails. The food is original and presented beautifully. We enjoy going after massages in the early evening.

    We had a wonderful evening there with granddaughter. She said the steak was one of the best she had ever had. They asked us if it would be OK to be in a room by ourselves and we loved it. It was so nice to not have any background chatter so that we could talk with our granddaughter and not be distracted. Food and service was outstanding.

    We had an outstanding experience at Sazon. The food was second to none from the squash blossom starter to the perfectly paired entrees with the chef’s moles and the spectacular dessert of mole poblano ice cream floating in chocolate it was all spectacular. Chef Olea always greets his customers and walks around the dining room ensuring everything is as expected. Simply said, one of the very best in Santa Fe. And we’re locals so we know most of the restaurants in town. I also must give a shout out to Tomas, our server. He was very pleasant and knowledgeable and gave us some excellent advice and options.

    The staff, service, food, and drink were outstanding, the setting lovely and sophisticated, reflecting New Mexican charm with a modern vibe. We were taken aback by the level of everything offered at this gem of a find. A highlight of our trip. Kudos to the inventive chef and kitchen for executing delicious and artistically pleasing offerings. And kudos to the wait staff for making us feel welcome and so well cared for. We will recommend this wonderful restaurant to anyone we know heading to Albuquerque. It measures up to anything we've seen internationally and on the East and West coasts.
