Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

The name Zacatlán surged from the origins of our chef, Eduardo Rodriguez. He was born in Zacatecas, Mexico (north-central Mexico), which is defined as "the habitants of the land where grass grows". Zacatlán is the nahuatl translation for "land with an abundance of grass", and that is where our idea of Zacatlán Restaurant began. Zacatlán Restaurant desires to continue to preserve the traditions for our upcoming generations, while bringing forth new flavors. These new flavors incorporate Southwestern and Mexican influences.     One of the best meals I've had in Santa Fe. Geronimo's is always a favorite - always expensive - and always nearly perfect. My husband had fish and I had beef. Both were excellent. My only issue is that WHY DO THEY SERVE EVERYTHING IN A BOWL. It's quite a pretense and actually makes it harder to eat some things! Also - the valet parker was obviously high and extremely irresponsible! While he was wallowing in his stupor, I waited over 10 minutes for him to get my car. He just kept turning his back on us and doing nothing!

    Beautiful patio area and I had an amazing burrata salad. Not many vegetarian options beyond a pasta and starter sized salads. My partner had the beef Bourguignon which was lovely but oddly heavy for a patio meal in the summer.

    El Pinto was quite a success. We hope to be back this coming Sat. As my sister, bro-in-law loved it. It was everything we wanted. I had asked for a quieter setting where my elderly sister & bro-in-law could hear well and enjoy. We had exactly that. It was a wonderful, peaceful & quiet setting. There were real plants and a waterfall to add to the wonderful peaceful room. Service was phenomenal and food delicious. We all loved it and will be making an another reservation as they head home from Colorado Springs. Thank you for a wonderful meal.
