Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

The name Zacatlán surged from the origins of our chef, Eduardo Rodriguez. He was born in Zacatecas, Mexico (north-central Mexico), which is defined as "the habitants of the land where grass grows".     This was more than a meal…it was an experience! It was one of the best restaurants I’ve ever been to. Each course was perfectly composed of unique flavors that blended together with perfection. The Sopa de Amor was mind blowingly good, unlike anything we’ve ever tried. I had the mole lamb chops, which were fantastic. The dessert, the Sinfonia (Chef Olea’s signature) was heaven - also unlike anything I’ve ever tried. Our server was wonderfully warm and knowledgeable. Chef Olea visited every table, such a wonderful treat. I can’t recommend this experience enough!

    One of the best meals I've had in Santa Fe. Geronimo's is always a favorite - always expensive - and always nearly perfect. My husband had fish and I had beef. Both were excellent. My only issue is that WHY DO THEY SERVE EVERYTHING IN A BOWL. It's quite a pretense and actually makes it harder to eat some things! Also - the valet parker was obviously high and extremely irresponsible! While he was wallowing in his stupor, I waited over 10 minutes for him to get my car. He just kept turning his back on us and doing nothing!

    Beautiful patio area and I had an amazing burrata salad. Not many vegetarian options beyond a pasta and starter sized salads. My partner had the beef Bourguignon which was lovely but oddly heavy for a patio meal in the summer.
