Tripe, sweetbreads, beef tendon, brains and other offal are at the heart of a simple cuisine deeply connected to Roman and Lazio traditions, alongside a selection of vegetarian dishes.
Since 2023, the Osteria has been awarded a Bib Gourmand by the Michelin Guide. The offering is complemented by a carefully curated selection of wines and olive oils, as well as two tasting experiences: one entirely dedicated to tripe and the other celebrating the gastronomic tradition of the Viterbo area.
