Located in Paia, Maui, we invite you to dine in our intimate, all Chef's Table dining room. Our everchanging Market Driven Menus always include a glass of sparkling wine, are Prix-Fixe, between 6-9 courses and range from $200-$300 per person plus tax, gratuity and any additional alcohol.

RESERVATIONS, CANCELLATIONS AND DIETARY RESTRICTIONS: If you are late, please call to let us know. We will make every attempt to catch you up, but we absolutely cannot make any guarantees on coursing and pacing. Reservations are STRICTLY held by Credit Card. Cancellations within 48 hours of the reservation will be charged $200 per guest, WITH ABSOLUTELY NO EXCEPTIONS. Please allow at least 2.5 hours for dinner. Allergies or dietary restrictions must be made known to the restaurant when reservation is made. If dietary restrictions are presented without notice, we will make every reasonable attempt to accommodate them but can make no guarantees.

    Unforgettable dining experience by Chef Jeremy and Paulina. Each dish is an amazing surprise of flavor combinations savoring every delicious bite! Paulina paired us with the perfect wine for each course and explains each master creation of locally sourced foods. A highlight to our trip to Maui!

    We had an extraordinary dining experience! Not only was the food and presentation unbelievable, but Chef Jeremy was incredible. We loved that he took the time to chat with our table and walk us through the menu and his passion for culinary art genuinely shines through.

    NyloS was outstanding and matches the best dining experiences at home. Every plate was exceptional - creative, tastefully presented and incredibly flavorful. Paulina and Jeremy made the evening the absolute highlight of our trip. The detail of discribing each tasting made the evening educational and highlighting the amazing foods grown on the Island. I cannot recommend NyloS more and should be on everyone's itinerary that is looking for an unexpected treasure and experience. Cannot wait to return.

    A wonderful experience and everything was delicious. A little pricy but everything is on the islands and mainland. So glad we went and highly recommend. A 3 hour experience of fine dining

    Husband and wife team truly showing their labor of love in the culinary arts through their creative exquisite presentations and mastery of well-balanced flavors!     Amazing atmosphere and an incredible Taste menu and wine pairing! Open kitchen allowed us to watch and waist with anticipation. Chef Jeremy combined different flavors in every dish to complement each other. The end results were outstanding!! The presentation of each dish was picture perfect!

    I couldn’t have asked for a better birthday dinner. My expectations were high, considering I’ve had many friends who have dined here and absolutely loved it. It exceeded my expectations and then some. Well done you two (three😉). That lollipop had me reminiscing about the entire experience the next day.. Incredible meal!
