Hidden 💎 Owners are sincere about their works and each one of their dishes is outstanding. Quality of fish is excellent too and you may feel like you are in Japan. Thank you for being there.

Having lived on the Big Island for 18 months, I can guarantee that Sushi Hana is without doubt the best dining experience you can have - and we have eaten at all the high-end hotels. The only caveat is that my experience was the Saturday-only Omakase. The restaurant receives fresh fish from Tokyo Saturday morning so this is the best day to go; my understanding is that other days of the week it is more like a regular sushi restaurant. Of the 12-15 dishes I think most would stand up well to their Japanese equivalents, the only two that would have been better in Tokyo or Hokkaido were the Ebi (prawn) and Uni (Sea Urchin); the Ebi was a Canadian prawn but the Uni was was Japan. Uni is seasonal and I have tried at least 10 varieties in Japan, as well as Santa Barbara and Maine in the US. My Japanese partner was really impressed as well. A good sign was to see them grating a wasabi root as we walked in, so many US sushi places don't offer real wasabi. For example at Kenichi (near Kona) you have to know to ask for real wasabi and pay extra for it (but it's worth it). The sake options were also ok, though can't really match the variety in Japan. If you want to drink Sake on the Big Island, there is a Sake Brewery and Japanese restaurant (Engawa) at the Golf Clubhouse of the Westin Hapuna. It makes 10 different Sakes and is a fun dining experience. They only serve 6-8 people for the Omakase so book well in advance. You will have an outstanding meal at Sushi Hana.

I moved from Tokyo over 30 years ago and have lived in Waimea for a while. I was waiting for a sushi restaurant like this! I wish the shari rice were softer and smaller so I could enjoy neta(top) more. I love to try homemade Tamago-yaki.

Omakase night is a real treat here. They put a ton of effort into the choice of ingredients served and the high level of service they provide. They had a lot of fish I had never tried before, and I was pleasantly surprised they they took the time to go into detail about what it looks like, where it swims, and how it's prepared. I will re-visit again for sure.

My brother and I had an unforgettable omakase experience at Sushi Hana, marking my second visit to this exceptional restaurant. Run by the dynamic duo, Haruki San and Etsuko, their passion and meticulous attention to detail were evident from the warm welcome through to the end of our meal. The menu featured a variety of seasonal-based dishes and nigiri, with standout nigiri of the night for us being fatty tuna nigiri (otoro) and raw shrimp nigiri (amaebi). The culinary journey concluded with a delightful light strawberry shortcake for my brother’s birthday, accompanied by an additionally light and tasty dessert to complete the night. We give Sushi Hana an A+ and highly recommend Sushi Hana for anyone seeking a top-quality omakase experience!
