- DDanielWest Sussex •6 reviews5.0Dined 3 days agoAn outstanding masterclass in hospitality. From the simple booking process to the warm welcome upon arrival. All waitresses were knowledgeable and friendly. They championed the local vineyard at Albourne Estate which sold us on a bottle of the Albourne Estate Sparkling Rose. Then the tasting menu awaited us with 8 courses in total (having opted for the cheese course to share). Canapes which were light and full of flavour worked so well with our fizz. Then home made Focaccia with delicious butter followed by goats cheese and beetroot which was perfectly balanced. We were now on a 500ml carafe of the house red wine which was smooth and delicious. The fish course of smoked haddock and scallop tart was exceptional and tasted of the sea and full of flavour as we returned to the Albourne sparkling rose. The duck main course was beautiful and succulent and thinly sliced which was truly sublime and arrived hot on the plate. Then to the cheese course which is a delight to have before the sweet courses allowing us to finish our red wine and the savoury part of our meal. All courses paced to perfection so they can be enjoyed to their full potential. Then two desserts of elegance starting with raspberry, pumpkin and almond tart followed by a tart of cherry, chocolate and pistachio which allowed us to finish the fizz in perfect harmony. Light background music and an ambience that allowed us not to be rushed, relaxed and happy to escape life outside of The Fig Tree for the 3 hours for an exceptional lunch. A lovely gesture at the end of the meal with some homemade fudge to say congratulations on our engagement was a special moment too! A michelin star is surely around the corner for a marriage of first class cookery and service which in addition to great value makes this a restaurant you should try ASAP! We especially liked the prawn coquettes and the fillet of pork. Very tasty indeed! The pear custard with hints of liquorice was interesting and something new. The waiting staff were friendly and knowledgeable and gave a good explanation of how the menu could work. It’s been cleverly designed to be either a collection of plates that are shared or a more traditional style with starters and a main meal. A great meal, interesting favours, very well cooked and presented. Thank you to the whole team for a great evening.More infoLe Flamant££££• Modern European• Lindfield•4.9
